Stone, Time, and Tea.

This is a large matcha millstone, approximately 1.3 times the size of our standard model.
It is designed for manual operation while maintaining high powder quality.
The turning resistance is slightly heavier.
It can also be motorized by using an electric turntable.

Notes on Use

The matcha ground by the millstone collects in the groove,
and, by design, falls directly into a container through an opening in the groove.

After use, please clean the interior thoroughly.
This tool is completed over time through continued use by its owner.

When grinding tencha leaves, place all the leaves into the opening first before starting to turn the millstone.
Although it is specially adjusted for tencha, it can also be used for gyokuro and sencha.

In addition, any fully dried leaves can be finely cut and ground with this millstone.

Detailed Design

The stone used for this mill is an extremely rare and high-grade black granite. Its distinctive characteristic is the absence of visible crystal grains and a higher density compared to ordinary granite.
This is a stone mill designed specifically for grinding tencha into ultra-fine matcha powder.
My matcha mill is designed so that you simply place the entire amount of tea leaves you wish to grind into the inlet and then continue turning the upper stone. The mill will gradually produce very fine matcha.
The matcha produced by the mill collects in the groove, where it is automatically gathered by a brush attached to the upper stone and guided into a container through a small hole in the groove.

One point that is often misunderstood is the contact surface between the upper and lower stones. The entire grinding surface is not in contact. Only part of the outer perimeter touches, while a gentle internal space gradually opens toward the center.
Material that enters the mill is gradually crushed into smaller particles, and finally becomes powder at the outer edge where it is discharged.
This gradual process is related to the internal space called “Fukumi.” The structure of this space narrows progressively so the material is reduced step by step.
When grinding large materials such as soybeans, the depth of the Fukumi space becomes larger?approximately half the diameter of the material is appropriate.
For small materials such as sesame seeds, the Fukumi space becomes extremely shallow, sometimes almost nonexistent.
If the meaning of Fukumi is not properly understood and the mill is not designed with the appropriate dimensions, large amounts of material may remain inside the mill after grinding. Conversely, material may fail to enter the grinding area and simply rotate at the bottom of the feed hole without being ground at all.

Very little tea leaf residue remains inside the mill.
In order to avoid wasting precious tencha, the grinding surface of the upper stone has been designed with a special structure.
After finishing, please clean the fine grooves with a firm brush to remove any remaining powder.
